I haven't been feeling super great for a while now (stomach issues, fatigue, general blah feeling, etc...), so a couple weeks ago my Mom suggested I go gluten free to see if I have a "food sensitivity" (a few steps down from a food allergy). I read every article and message board I could find about gluten and came to the conclusion that I was most likely what they call "saturated". This definitely made sense to me because every single meal I ate at the time included some type of bread or other gluten filled product; and it was like my body couldn't keep up with my gluten intake anymore.
So a week and half ago I cut out gluten cold turkey, and let me tell you...it was really really hard because my favorite foods are pizza, bagels, pasta and basically any type of bread. All of a sudden we didn't have anything in the house I could eat because everything has some sort of gluten in it (you'd be surprised what foods have wheat as an ingredient). Eric has been very supportive and even bought me gluten free bread and bagels, but neither taste like the real thing. Let me just say, gluten is delicious!
Since going gluten free I think I feel a difference. I don't feel so tired all the time (I was actually getting to the point of daytime narcolepsy at my desk at work), and I just feel generally better overall. I'm not sure if it's because I'm eating less (since there's a huge list of things I can't eat) or if it's because of the absence of gluten, but I'm planning to try and keep it up for a week or 2 more and then slowly start to add gluten back into my diet as a test. I'll keep you posted...

I almost hope that the problem isn't gluten cause that would suck not being able to eat all of your favorite things anymore. Hope you figure out whatever it is though.
